1 lb boneless, skinless chicken breasts

1 tbsp butter
Instructions:

When the cooking time is up, allow the Instant Pot to release pressure naturally for 10 minutes. Then, carefully release any remaining pressure using the release valve.

Remove the chicken breasts from the Instant Pot and shred them using two forks.

Stir in the butter to the rice mixture in the Instant Pot until it is melted and the rice is fully coated.

1 cup green beans, trimmed and cut into 1-inch pieces
1 (14.5 oz) can diced tomatoes
4 cups vegetable broth
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 (15 oz) can kidney beans, drained and rinsed
Instructions:

Set the Instant Pot to the “Sauté” setting and add the olive oil. When the oil is hot, add the onion and garlic and cook for 2-3 minutes, or until the onion is translucent.

Add the celery, carrot, zucchini, yellow squash, and green beans to the Instant Pot and cook for an additional 2-3 minutes, or until the vegetables are slightly softened.

Stir in the diced tomatoes, vegetable broth, basil, oregano, salt, and pepper.

Close the Instant Pot and set it to the “Manual” or “Pressure Cook” setting for 5 minutes.

When the cooking time is up, carefully release the pressure using the release valve.

Stir in the kidney beans and cook for an additional 2-3 minutes, or until the beans are heated through.

Serve the soup hot and enjoy!
